Farfalle Dishes

Farfalle have a personality of their own on the plate. They move differently from other shapes and rarely work well alone, pattern and color need to harmonize when they come together in a dish. Contrast matters, not only between the pieces themselves, but with the sauce, the other elements, even the plate. Not every piece shows its full pattern. Some overlap. Others disappear into the composition.
